Tomatillo Avocado Salsa
INGREDIENTS
6 medium sized tomatillos
2 green jalapeños
handful of cilantro, stems removed
juice of 1 lime
1 small Spanish onion, chopped
pinch of salt
pinch of pepper
1 ripe avocado

HOW-TO
Peel and discard husks from the tomatillos
Place tomatillos and jalapeños in a saucepan, add enough water to cover. Bring to a boil, then remove from heat and let steep until ingredients are soft, about 30 minutes
Reserve the flavored water from the pot and set aside
Place softened ingredients in a blender
To the blender add cilantro, lime juice, onions, salt and pepper
Blend until liquefied, adding reserved cooking water to aid in the blending process
Scoop out meat from avocado and add to the blender at the end. Mix until all ingredients are puréed
Serve with chips, tacos or Amanda's South Texas Pork Tamales
